Here are some fantastic and healthy ways for you to use those oats sitting in your pantry.
Healthy Gut Oatmeal
1 cup organic rolled oats
2 cups water
1 tsp fenugreek seeds
½ tsp cinnamon
¼ cup dried fruit of choice (optional)
1 tsp slippery elm powder
¼ tsp sea salt
1 tsp ground flaxseed
3 Tbsp. goat kefir or plain yogurt
Pour water, oats, and kefir/yogurt into a medium pot and mix well. Let sit covered overnight.
In the morning, add more water if necessary, cinnamon, slippery elm, and salt. Bring to boil, then lower to simmer; cook about 5 minutes, stirring often, so not to burn.
Top with flax seeds, 1-2 Tbsp. kefir and fresh/frozen berries. Can add honey for sweetness.
Keto/low carb oats
1 cup unsweetened almond milk
½ cup hemp seeds
1 Tbsp. flax meal (ground flax)
1 Tbsp. chia seeds
1 Tbsp. unsweetened shredded coconut
1 tsp cinnamon
1 tbsp. coconut oil
Combine everything in saucepan and mix well. Let simmer for just a few moments, until begins to thicken, stirring often. The chia seeds will continue to swell and thicken mixture. Top with fresh/frozen berries and goat kefir.
